We have chosen the word Unicorns because we don’t think there is a better one to describe the what and the why of this mission. The what refers to wines, that quench our curiosity and thirst for research. And what are we in search for? Unicorn Wines, named such because of their rarity and the obsessive need for exploration, investigation and examination that they instigate in us. The why is us: unicorns have an obsession for change, they are in love with it. But it is not just any change, it’s an evolution of the status quo, energized by high voltages of enthusiasm in search for intuitions and possibilities. This is the human algorithm that created Vineria Aperta. Who knows what other disturbance we’ll add next.

Being fully aware of the fetish people have for wine tasting (verticals…horizontals…whatever position you might be into) we offer a few options with focus on our land and therefore Brunello di Montalcino, to guide you through the discovery of the wines that we love. You have the chance of tasting and learning the differences between the four slopes of Montalcino, but also uncover the hidden gems from the smallest Brunello producers.
Cuisine and Wine
Food is accurately supplied by local craftspeople following a thorough selection: cheese, vegetables, and meats, all of them coming from a 10/15 km radius.

The buzz, the enthusiasm for new projects are certainly a source of vital energy and essential motivation. All this, combined with our irrepressible pathological urge to uncork bottles, gave birth to the idea of this avant-garde wine bar in the heart of Montalcino. The Vineria Aperta is haunted by winemaker’s ghosts from the past, present and future, it welcomes everyone that has a kink for wine and natural wines especially.

Although we feel the strong bond with our territory where Brunello di Montalcino reigns as king, sometimes we like to go beyond its borders, and our crazy wine list will certainly reflect that. Over 1500 labels from both old and new world wine countries made by artisans that truly know how to play with terroir-driven experiences.
Please note that the wines included in the menu are the absolute result of sleepless nights spent driving to the farthest Domaine, relentless stalking of the most inflexible vignerons, begging girlfriends to take us back after yet another 3-day natural wine fair, excessive amounts of wine tastings, and a whole lot of fun.
